Grilled Salmon with Pesto Zoodles

Over the next few weeks leading into summer we are going to be sharing with you some of our favourite summer meals.

To kick off this series of recipe’s is our quick and easy Grilled Salmon with Pesto Zoodles. Low carb, jammed packed full of protein hand healthy fats, this dish takes only a few minutes to prepare and cook. With only 4 ingredients all of which can be purchased from the supermarket all ready to go, even someone who doesn’t like cooking can whip up this meal.

This recipe is per serve so just multiply it for the number of people you are cooking for.

So what do you need?? Simple. 4 Ingredients, a BBQ and a frying pan…That’s it! If your BBQ has a wok burner on the side even better again.


200g skinless  Atlantic Salmon fillet

150g zucchini zoodles.. This can be purchased all ready to go from the fresh fruit and veg section of most supermarkets

1 jar of basil pesto.. I used Leggos

Olive oil spray


Starting by grilling your salmon of you BBQ grill until its cooked to your liking.

While your salmon is cooking, warm a frying paying and lightly spray with olive oil spray.

Toss in the zucchini zoodles and a few TSP’s of the pesto (roughly ¼ of a jar)

Toss the zoodles and pesto until the zoodles warmed are covered with pesto. By this time your salmon will be cooked.

Plate the zoodles and place the grilled salmon on top. Add some salt & pepper to taste and sit back and enjoy.

So that’s it, super quick and easy and the perfect dish to cook for you family or entertaining a group of friends for a weekend catch up.
